About the Recipe
Coconut and vanilla give this iced cacao a soft, tropical character. It is an XOL creation drawing on flavors familiar in Puerto Rican cooking, made with one Lost World coin and served smoothly over ice. Choose a light carton coconut beverage here; canned coconut milk makes a much richer drink.
Ingredients
1 XOL Lost World coin (about 15 g), chopped
60 ml water
180 ml unsweetened carton coconut beverage, chilled
10–15 g panela, to taste
1/4 teaspoon vanilla extract
100 g ice
Preparation
1. Warm the water and panela in a small saucepan. Add the chopped Lost World coin and whisk gently until it has melted into a smooth cacao base.
2. Remove from the heat and whisk in 60 ml of the chilled coconut beverage and the vanilla. Let the mixture cool for about 10 minutes.
3. Fill a glass with ice. Pour in the remaining 120 ml coconut beverage, then stir in the cacao base until evenly combined.
4. Serve immediately and enjoy the coconut-vanilla finish. Use one coin for this single serving and follow the product label directions. For a version without added botanicals, use one Pure Love coin instead.
